Analysis of Heavy Metal Content of Copper (Cu) in Red Snapper (Lutjanus malabaricus (Bloch & Schneider, 1801) at Karangploso Market, Malang Regency, East Java Using the Atomic Absorption Spectrophotometer Method

Abstract

Malabar blood snapper (L. malabaricus) is one of the important economic fish that always sells well in the market. This study aims to determine the presence of heavy metal copper (Cu) in the body of L. malabaricus which is traded in the Karangploso market, Malang Regency, East Java and to distinguish the content of heavy metals in the gills, stomach, and meat. The research method used is a descriptive quantitative method, which is carried out by testing in the laboratory using an AAS (Atomic Absorption Spectrophotometer) tool. Analysis of the results of heavy metal examination data on L. malabaricus descriptively is displayed in the form of tables and graph. Data analysis using One Way ANOVA. The results of the study showed that there was a content of copper heavy metals in the gills, stomach and meat of L. malabaricus with a value ranging from 0.11 mg/kg to 0.16 mg/kg. There was a significant difference in the content of copper heavy metals in the gills and meat and the copper content contained in the gills was more varied. The content of copper heavy metals contained in the gills, stomach and meat of L. malabaricus was still below the standard quality limit of 0.20 mg/kg, according to the Regulation of the Food and Drug Supervisory Agency of the Republic of Indonesia Number 5 of 2018 concerning the maximum limit of heavy metal contamination in processed foods with the category of fish food and fish products.
